The other night, I used this recipe for Last Minute Meatballs–which we absolutely love here at the Yankee Homestead–and turned them into Meat Muffins and Mini Meatloaves.
Thanks to Heather, for reporting on her success with Meat Muffins based on my meatball recipe.
I multiplied the recipe times six (!) and filled up all my muffin tins (two 12-counts and one 6-count), plus my mini-mini-loaf tin, plus one mini-loaf pan.
It worked great! What a versatile recipe.
