Another winning recipe from Eat Like a Dinosaur!
Quick and easy–two of my favorite words in the kitchen, Mini Nut Butter Cups were a big hit with the entire family. I’ll definitely be making these tasty treats again!
One night last week, hoping to whip up a quick dessert and feeling uninspired by my standard go-to recipes, I flipped through a few cookbooks. This recipe for Mini Nut Butter Cups leaped off page 195 of Eat Like a Dinosaur–it was just the solution to my dilemma!
In addition to their yumminess, Mini Nut Butter Cups also pack a pretty nutritious punch thanks to this ingredients list:
- eggs
- mashed banana
- nut butter (or sunflower seed butter)
- sea salt
- mini chocolate chips
- chopped pecans (optional)
Did you catch that? Mini Nut Butter Cups have only five ingredients, with chopped nuts as an optional sixth. And I bet you’ve got all of them in your kitchen right now.
For the complete recipe, you’ll need to consult a copy of Eat Like a Dinosaur. Don’t own the book yet? Try your local library!
Written by The Paleo Parents with families in mind, this collection of gluten-free recipes has provided help and inspiration in my own Real Food, gluten-free kitchen.
Tip: If you check out Eat Like a Dinosaur enough times from the library, maybe your husband will buy you your very own copy. That’s what happened to my friend Teresa…
PS–Check out the waffle recipe on page 231…it’s our favorite! Available here, too: Paleo Waffles.
I’m off to raid the fridge for another Mini Nut Butter Cup…
